About the Host

Chef Michael Schwartz grew up in Philadelphia and earned his culinary stripes in top restaurants throughout Los Angeles and New York before landing in Miami in the early 90s. Fast forward to today, and he’s now established himself as a true Miami institution; he owns 6 of the city’s most-beloved eateries and won James Beard’s ultra-prestigious “Best Chef: South” Award in 2010. His empire includes Amara at Paraiso, Traymore, Tigertail + Mary, Harry’s Pizzeria, and his landmark restaurant, Michael’s Genuine Food & Drink, which has been a beacon of the city’s culinary scene for over a decade. While his restaurants span various cuisine types, they all share the common theme of emphasizing all that is local and fresh. His success is tied to his simple philosophy that the secret to good food is good food. We look forward to learning from Chef Schwartz and hearing all about his food passions!


About the Event

Chef Schwartz welcomed us into his home kitchen (via livestream), and taught us how to cook a multi-course hearty American meal showcasing a few of his favorite signature dishes (see menu below). And, as is always the case at our events, he took plenty of questions from attendees while he cooked and participated in an extended Q&A to close out the night!

Appetizer: Lentil Salad with Radicchio, Arugula, Orange, Radish and Feta

Entrée: Crispy Pan Roasted Chicken Thighs with Roasted Onions and Carrots, Tahini Sauce, Seeds, and Herbs

In addition to getting unlimited viewing access to the recording of the livestream event, where Chef Schwartz demonstrated how to cook both dishes and answered plenty of questions from attendees, you will receive access to the companion Recipe Book, which includes a complete grocery list and step-by-step cooking instructions/kitchen equipment/ingredients needed to make each dish.

This event runs for 1hr 24min from start to finish – 1hr 9min of cooking and 15min of additional Q&A at the end.

What ingredients will be needed?

In addition to the following kitchen staples – black pepper, kosher salt, cumin, extra virgin olive oil, neutral oil (e.g. canola or vegetable), and soy sauce – Chef Schwartz recommends acquiring the following ingredients listed below:

  • Bone-in skin-on chicken thighs
  • Brown lentils
  • Carrots
  • Cilantro (optional)
  • Dill
  • Feta
  • Garlic
  • Lemons
  • Navel oranges
  • Pumpkin seeds
  • Radicchio
  • Radishes
  • Red cabbage
  • Red onions
  • Sesame seeds

Easy to follow. Doesn’t take himself too seriously. Few times he changed technique from instructions or wasn’t clear. Still enjoyed & loved the dishes!

I am a follower of Michaels. Enjoyed it. I guess I thought it would be where he could engage the audience a tad. That was disappointing. But, it is what it is.

The Chef was very personable and I felt like I was in the room with a friend having a glass of wine He is also a skilled and practical chef. I learned a lot from his demonstrations of technique and loved his recipes. Also, he is a NE Philly guy which I am so I could relate. This was my first Chefstream event. Chef Schwartz was such a patient teacher talking about why he put different things together and how they built flavor. Interestingly, while the menu made it seem rather straightforward and almost plain, the food was nuanced and delicious — not surprising but unexpected which made it even better! Maybe one of the best classes yet!
