About the Host

A Los Angeles native, and graduate of California Culinary Academy, Chef Jackson has nearly 30 years of professional culinary experience. Over the course of his career, he’s cooked under renowned chefs such as Wolfgang Puck, Reed Hearon, and Susan Feniger, started a wildly popular bicoastal underground supper club dubbed SubCulture Dining, and opened numerous successful restaurants of his own including Russell's in LA. Lafitte in SF, and Reverence, his current project, in NYC. Located in Harlem, Reverence is an 18-seat tasting menu-only eatery where Chef Jackson pays tribute to California cuisine. Restaurant experience aside, he also served as a contestant on “Iron Chef America” and “ The Next Food Network Star,” where he finished in 3rd place!


About the Event

In this chefstream, Chef Jackson livestreamed from the kitchen of his restaurant, as he taught us how to cook two of his favorite signature California-inspired dishes: Pozole Verde with Clams, and a Chocolate Miso Tart. And, as is the case at every chefstream, he answered questions from attendees throughout the evening and participated in an extended Q&A to close out the night!

What ingredients will be needed?

In addition to the following kitchen staples – all-purpose flour, extra-virgin olive oil, granulated sugar, and sea salt – Chef Jackson used the following ingredients listed below:

  • Cilantro

  • Dried hominy

  • Dry white wine

  • Fennel

  • Garlic

  • Heavy cream

  • Jalapeño pepper

  • Large eggs

  • Lemons

  • Limes

  • Littleneck or Manila clams

  • Milk

  • Poblano pepper

  • Radishes

  • Scallions

  • Semisweet or bittersweet chocolate

  • Tomatillos

  • Unsalted butter

  • Vidalia or white onions

  • White miso

Was fun! I learned a lot. I really enjoyed the experience. One note- my chocolate miso tart Came out Way too salty. I used the exact measurements like in the recipe. I think the discrepancy Was that each miso brand differs in salt content. I think the chef needs to take that into consideration When recommending quantity of miso to be used. My tart crust turned out perfect. My filling would have been delicious if it just wasn’t so salty.
