About the Host
To put it simply, Chef Tory Miller has reached the pinnacle of his profession. His three high-profile restaurants in Madison, Wisconsin—L’Etoile, Graze, and Estrellón—are drawing national attention. He won James Beard’s ultra-prestigious “Best Chef: Midwest” Award in 2012. And, he took down “unbeatable” Iron Chef Bobby Flay on Food Network’s “Iron Chef Showdown,” advancing his reputation significantly. Born in South Korea, Miller was adopted at the age of 18 months and was raised in Racine, Wisconsin, where he worked in his grandparents’ diner. In 2ooo, he graduated second in his class from the renowned French Culinary Institute in New York and cut his teeth in the kitchen of NYC’s three-Michelin starred fine dining establishment, Eleven Madison Park. There is so much to learn from this man, who is such a strong believer in locally grown, sustainable, organic ingredients, and we are incredibly excited to have him on board for this chefstream!
About the Event
Chef Miller welcomed us into his home kitchen (via livestream), and taught us how to cook a multi-course meal showcasing a few of his favorite signature dishes (see menu below). And, as is always the case at our events, he took plenty of questions from attendees while he cooked and participated in an extended Q&A to close out the night!

In addition to getting unlimited viewing access to the recording of the livestream event, where Chef Miller demonstrated how to cook both dishes and answered plenty of questions from attendees, you will receive access to the companion Recipe Book, which includes a complete grocery list and step-by-step cooking instructions/kitchen equipment/ingredients needed to make each dish.

In addition to the following kitchen staples – extra virgin olive oil, granulated sugar, ground black pepper, honey, kosher salt, light brown sugar, neutral oil (e.g. canola or vegetable), rice vinegar, soy sauce, and sesame oil – Chef Miller recommends acquiring the following ingredients listed below:
- Asian pears or sweet apples
- Boneless sirloin or strip steak
- Cantaloupe
- Carrots
- Cilantro (optional)
- Crab meat, canned or fresh (optional)
- Daikon radish or red radishes
- Eggs
- Fish sauce
- Fresh ginger
- Garlic
- Gochugaru (or substitute cayenne pepper)
- Gochujang (or substitute sriracha)
- Kewpie mayo or regular mayonnaise
- Kirby or Persian cucumbers
- Limes
- Mirin
- Panko bread crumbs
- Scallions
- Short grain rice, such as sushi rice
- Spinach
- Thai chilies, serrano peppers, or jalapeños (optional)
- Toasted sesame seeds
- Yellow onions
- Zucchini or summer squash
